Chocolate ice cream (and how much I love bananas)
I love icecream. It’s a massive weakness. Especially in summer. But, since I discovered this fantastic little combo it’s not such an issue.
Just process two chopped frozen cavendish bananas (peel them before you freeze them, and try to use cavendish rather than lady finger - they’re creamier) with a tablespoon of pure cocoa or carob powder. Then keep blending until its smooth and creamy (3-5 minutes). I like mine a bit mousse like, so I tend to over-blend it a bit. You can also refreeze this mix, but I think it’s best eaten straight away.
I’ve also heard the bananas work quite well with just vanilla essence, or strawberries, but I haven’t tried those versions yet. Maybe next time. I think I might add some protein powder next time I make this too - what a perfect post workout treat!
Frozen bananas are such a versatile ingredient to have on hand. When we were given the warning that Tropical Cyclone Yasi was about to hit I knew our banana farmers were about to be wiped out. So I bought 20kg of bananas that night, chopped them up, and stuck them in the freezer. It lasted me five months, pretty impressive considering how often I use them for smoothies, ice cream, oatmeal and pancakes. Once I used up my supply I was devastated, so now that our bananas are back, I’m packing as many as I can into my diet in the next couple of months, because I wouldn’t be surprised if North Queensland was hit again this season.
